This is my go-to recipe. If I am starving to the point that I only have 20 minutes to make something healthy to eat before I pass out or suddenly guests arrived, and being of Russian descent, I cannot let the guests leave hungry, I make this one. I almost always have tofu and sweet potato in my disposal.
What makes this special is the texture: the tofu gets slightly caramelized from the maple/date syrup and the sweet potato. Delicious! The guest never know how easy it was actually to make! I usually serve it with buckwheat or tahini sweet brown rice (just brown rice mixed with tahini and some maple/date syrup).
So here is goes.
A package of tofu (250 grams) Cut in cubes
2 small sweet potatoes or one large one, cut in cubes
2 tbsp olive oil
1/2 tsp turmeric
1/2 tsp cumin
2 tbsp maple or date syrup
1/2 tsp atlantic salt
A pinch of black pepper
Mix all thoroughly. Bake in the oven on high temp (300) for 10 minutes, then switch to medium (200 degrees) for 10 more minutes.
P.S. In the photo above, the tofu sweet potato mix shared a tray with brussel sprouts! Those are super easy to cook - just olive oil, cumin and salt.
